Tasting notes
Ruby red in colour. A rich nose with notes of ripe red fruit and spice. The flavours follow through on the palate, offering a good level of concentration thanks to the deeply rooted old vines, high acidity and silky tannins.
Food pairing
A great food wine. Pair with a wide range of foods including poultry, salmon, pork belly and cheese.
Additional information
Destemmed and full-bunch grapes were used in the fermentation process. Natural fermentation took place with indigenous yeasts. This was followed by 10 to 14 days of semi-carbonic maceration, to enhance the concentration of the small old-vine grapes. The wine was then aged for 10 months in
concrete tanks, to combine preservation of the fresh aromas with delicate micro-oxygenation.
