Saint-Bris le Vineux is the most important wine-growing town in Grand Auxerrois. The village has 1,000 inhabitants, its total area reaches 3,000 hectares, of which more than 750 are planted with vines. The Bersan winegrowers can be traced back to the 15th Century. The name of the village of St BRIS comes from the name of a Christian martyr “Sanctus Priscus” (St PRIX), this name will evolve during the French revolution to become St BRIS then Saint-Bris le Vineux at the beginning of the 20th century. The village was surrounded in the 14th century by fortifications flanked by 17 towers. Today there are only 2 access doors and a network of underground passages connected to the cellars used, at the time, for the movement of men at arms. The vineyard in Saint-Bris le Vineux is planted on more or less sloping hillsides bordering the EAST bank of the Yonne valley 10 km south of Auxerre and 15 km west of Chablis. The subsoil is clay-limestone, from the Jurassic period with Portlandian on the top of the hills and Kimmeridgian on the slopes.

This Crémant from Domaine Bersan has a delicate palate and a persistent mousse, there are notes of yellow stone fruit on the palate. There is a wonderful mineral note to the finish, which lasts and lasts.

As an aperitif or with a light dessert (without chocolate).
