Tasting notes
Deep ruby red in colour, tending towards garnet. Ethereal on the nose, with aromas of violet, blackberry jam, liquorice and cloves. Full bodied on the palate, with silky tannins and a delicious finish of berry fruits and chocolate.
Food pairing
Pair with hearty dishes, such as game, Ossobuco, a rib-eye steak, mushroom or truffle risotto, or wild boar ragout.
Additional information
Selection criteria for the Vite Colte vineyards include: low yields per vine, hand harvesting, and integrated and/or organic viticulture. Grape growers are remunerated on the basis of the size of the vineyard, not the quantity of grapes, to ensure quality levels.
Following around 25 days of “submerged cap” maceration, malolactic fermentation took place in stainless steel. The wine was then aged in oak barrels for 36 months before the final blending and bottling, followed by a period of bottle ageing.
