Why we love it
A lovely, creamy traditional-method sparkling white – a great West Sussex alternative to Champagne.
Tasting notes
Lemon yellow in colour. On the nose, delicate aromas of baked apple, honeysuckle and brioche. Creamy on the palate, with notes of grapefruit, lemon peel and honey.
Food pairing
Excellent as an aperitif or with fish and chips.
Additional information
The blend is 70% Chardonnay and 30% Pinot Noir.
The Chardonnay and Pinot Noir grapes were fermented in stainless-steel tanks at around 14°C to preserve their bright primary-fruit aromas. The base wines were left in tank for 10 months prior to secondary fermentation in bottle. After bottling, the wine spent 24 months ageing on its lees to develop a subtle and well-integrated autolytic character.
