Turkey is currently the world’s 6th largest grape grower having many microclimates and soil types. The country is also blessed with hundreds of indigenous varietals suitable for making unique and quality wines. Pasaeli built a boutique winery in Kemalpaşa near the port city of Izmir in the western part of Turkey. Total production is currently around 150.000 bottles a year. Yapıncak variety is native to Şarköy – Tekirdağ on the European part of Turkey. Grown in a single vineyard with 50-year-old vines at an altitude of 200 meters, it is fermented in stainless steel tanks at a temperature of 18C and aged on its lees “sur lie” to provide complexity and with 10% barrel aging in French oak barrels.

The nose is aromatic with rich notes of lemon, quince and linden. Lovely citrus on the palate too – bright and crisp, and full in the mouth with a pleasant acidity and minerality.

Serve well-chilled (8 to 10°C) with seafood or ceviche
