Why we love it
A vibrant Italian Cabernet Franc from the Alpine foothills – excellent with roast meats and mature cheeses.
Tasting notes
Ruby red in colour, with purple hints. Intense and distinctly herbaceous on the nose and a lovely, fresh palate showing blackcurrant, bramble and leafy characters and fine tannins.
Food pairing
Perfect with red meats and roasts, as well as game birds and mature cheeses.
Additional information
The grapes were destemmed, keeping the berries as intact as possible, before fermentation in traditional oak casks. The cap was punched down by hand until the desired color and tannins were obtained, before pressing in a traditional press. After settling for a day, the wine was matured in barrel for 12 months. It was matured for a further six months in concrete and six months in bottle before being released.
