Additional information
The grapes were harvested by hand, destemmed on arrival at the winery and left uncrushed. Fermentation took place in concrete vats using indigenous yeasts, with limited punch downs taking place for gentle extraction of tannins. After two weeks the wine was gently pressed. Ageing took place in concrete tanks for 14 months, with a small amount of the blend aged in amphorae.
