Tasting notes
Deep ruby red in colour. On the nose, enticing aromas of blackberry and a hint of spice. Flavours of roasted plum, violet and elderberry coat the palate, along with subtle notes of white pepper. Well-integrated tannins and a long, lingering finish.
Food pairing
A good partner for grilled red meats and meat dishes involving a peppery sauce.
Additional information
The grapes underwent a 48-hour cold soak prior to fermentation. Fermentation took place in stainless-steel tanks, followed by 10 to 15 days of maceration on the skins to extract the tannins and lend structure to the wine. Ageing took place predominantly in stainless-steel tanks to preserve the fresh primary-fruit aromas, with around 5% of the wine aged in neutral French-oak barrels for 12 to 14 months to round out the tannins.
