Why we love it
An old vine Chenin Blanc from Bottelary, with grapes harvested at different ripeness levels to balance rich ripeness with fresh acidity.
Tasting notes
Lemon yellow in colour. On the nose, aromas of citrus, ginger and stone fruit. On the palate, a harmonious balance between ripe Chenin flavours and freshness and acidity. A medium to full mouthfeel with a hint of minerality and an elegant, creamy finish.
Food pairing
Drink with chicken or turkey, pork chops, veal, smoked salmon or a terrine.
Additional information
The grapes come from old vines in a 1982 Bottelary vineyard. They were harvested at different times: 30% harvested early for freshness and acidity; 40% at optimal ripeness; and 30% late harvested for rich, ripe flavours.
Malolactic fermentation occurred spontaneously. The wine was matured in old French-oak barrels, the main objective being micro-oxygenation and greater lees-contact surface area rather than adding the oaky, smoky characteristics of newer oak.
