A wonderfully layered single-vineyard Pinot Noir from one of Australia’s best producers, located in the Yarra Valley.
Tasting notes
Deep purple in colour. On the nose, a bouquet of Maraschino cherry and plum with spicy notes and a slightly savoury character. Vibrant and fresh on the palate with ripe, silky tannins and a luscious finish.
Food pairing
A fine pairing for grilled salmon, Beef Wellington, roast pork, lamb skewers or mushroom risotto.
Additional information
The Applejack Vineyard, located in the upper Yarra Valley, boasts grey clay loam soils over a black (basalt) volcanic base on east-facing slopes. The 300-metre altitude results in a cool, extended growing season, ideally suited to Pinot Noir.
The fruit was hand picked and chilled overnight to 12°C. Indigenous yeasts were used for fermentation, which took place in small oak fermenters and stainless-steel open vats. The MV6 clone grapes were fermented as whole bunches, while the Pommard and Abel clone grapes were destemmed, soaked cold for five days, then allowed to warm gently into a wild ferment. All the parcels were matured in French oak (25% new) for a total of eight months.
